Long time no talk! Needless to say, it’s been a busy phase of life around here. Nathan is in full-on study mode for Step 1, and I am keeping up with work and a few new projects of my own. We are enjoying it though, and have had a lot of fun lately – between Valentine’s Day celebrations, time with family and hanging out at home, life is good!

You know what else is good? This dinner!

I let Nate pick out a recipe from my Pinterest board of dinner ideas, and this is the one he landed on. I cooked it up for us on an especially cold, blustery day and it totally hit the spot. I think this one will definitely be in our rotation from now on!

The good stuff: It’s 5 ingredients, takes one skillet and just about 20 minutes from start to finish. What could get better?!

One Skillet Sausage Pasta Bake

  • 1 lb. ground Italian sausage
  • 2 cups uncooked penne pasta
  • 8 oz. tomato sauce
  • 1.5 cups water
  • 1 cup mozzarella cheese

  1. Cook the ground sausage in a 10 inch skillet over medium-hight heat for 5-7 minutes (or until no longer pink). Drain. 2015-02-16 17.49.11

  3. Heat to a boil, stirring occasionally. Then reduce to a simmer, uncovered, and cook for about 10 minutes or until pasta is tender. Stir occasionally.2015-02-16 18.02.24
  4. Remove from heat. Sprinkle cheese on top and cover with lid. Let sit for about 3 minutes or until cheese is melted.2015-02-16 18.04.282015-02-16 18.12.38

This was delicious and so easy. I can already envision adaptations that we would enjoy…adding some spices or vegetables (like broccoli or spinach, or even some bell peppers and onion) would totally work with this. I recommend serving it with a side of garlic bread (or buttered French bread) and some simple salads to round out the meal.

Cooking up the sausage brought back strong memories of eating Domino’s sausage pizza as a kid. That probably sounds weird, but the smell while it was cooking was exactly what I remember opening up a big pizza box of sausage pizza smelled like when I was younger! The Domino’s sausage pizza was my go-to order for years, so this comfort meal definitely brought a taste of home with it 🙂

What are some of the latest recipes that you’ve enjoyed this winter? I’m definitely going to let Nate have his pick of my Pinterest board more often – he has great taste! (And I get to try something new, too!)

Side note…
In book news, I’m currently reading Serena by Ron Rash and just finished Us by David Nicholls. I recommend both, but will do an official review of Serena once I’ve actually finished it. I’m totally swept up in it now and can’t wait to see where it goes!

  1. That looks delicious! We had plain ol’ spaghetti for our Vday dinner and I was reminded how good the simple go-to recipes are 🙂 Our new favorite appetizer is baked brie in crescent rolls. Makes every meal feel more fancy!

    I just started “Us” per your recommendation and am loving it so far. I am so glad to have a new book to be into!
