While spring is surely on the way, until it blasts us in the face we are going to keep taking advantage of the cool weather by using our crockpot for dinners!

We tried a new recipe this week which was just too good not to share. It’s Nathan’s birthday week (and also happens to be exam week), so I’ve been prepping some good food for him to have, including these BBQ chicken roll-ups for lunches. Between that and this dinner, I’m hoping his 24th year gets off to a great, delicious start!

Crockpot Chicken & Biscuits

Ingredients

  • 4-6 chicken breasts
  • 2 cans cream of chicken soup
  • 6 oz. plain greek yogurt
  • 1 packet onion soup mix
  • 1 can Pillsbury biscuits

Directions

  1. Bake the package of biscuits
  2. Dice chicken breasts
  3. Mix chicken, yogurt, soup and onion mix in crockpot.
  4. Cook on low for 8 hours or high for 4-6 hours. Serve on top of the biscuits. (I missed this step originally and actually put the biscuits on top all day while this cooked. Oops!)2015-03-08 10.19.57

When they’re done, the biscuits will have browned if you follow my lead. But they aren’t burned! They are a nice, doughy dumpling. We loved them and may do this on purpose next time! 2015-03-08 18.52.52

We served ours alongside some squash and broccoli and both of us went back for seconds. Totally hit the spot! Tasted just as good as it smelled while it cooked all day 🙂

If you guys need one more crockpot meal to get you through the cold days, I would feel very confident recommending this one. It’s simple, low maintenance and delicious…a big win in the Beachy house.
